Lately i have been using more and more microwave pouch rices mainly because they are just so quick to use. However, they can lack bulk and taste at times so i have put together a little video of how i bulk mine out and add more taste and texture to a boring rice.
You can also do this with any leftover rice you have, add any spices, any vegetables that need using up or any herbs you have its a fantastic way of dealing with anything that is destined for the bin.
When a new recipe is born out of a mistake – when you are in a rush not feeling too well and you pick up the wrong bottle of sauce and dont realise until its poured into the frying pan ha!ha!ha! However turns out that this little mess up created a cracking recipe.
Another simple meal for the family and again can be on the table within 10 minutes it will also make a fantastic weekend fakeaway.
I love storecupboard recipes and to be honest i dont think there is anything wrong in using these kinds of ingredients as long as they are low in calories and sensible with sugar and salt amounts.
In this one i used the ASDA sweet & sour sachet which i think was approx 33p and to be honest was really nice and i will definitely be making it again – a fantastic way to get a meal onto the table in 10mins or less.
There really isnt a recipe for this one its just a case of adding anything you have but its also a fab way of using up any vegetables in the fridge that are looking past their best.
If you want a quick easy meal go no further not only is this super quick but it is super tasty! You can use any meat you like i decided to use pork and it was delicious.
I served mine with stir fry and noodles but you could easily serve with rice. This would also make a fantastic weekend fakeaway and is a brilliant Storecupboard recipe i will definitely be keeping a sachet of this in our cupboards.
A fantasic way to use up leftover Gammon or Ham as you will see mine was sliced and it still worked and made a lovely tasty meal.
Simple store cupboard ingredients used and this can be ready in 5 minutes, as the ham is already cooked you start reducing the sauce first then add the ham later as it really just needs warming through.
Depending on how much Gammon / Ham you are using you may only need 2 Tablespoons of each ingredients it really depends how much sauce you want and like.

Christmas is nearly here and we are all super busy and all trying to stay on the diet plan of choice so im hoping these short cut cooking hacks will help get a fab family meal onto the table in record time. For the pastry you can use any shape or size which if following a diet plan will reduce calories, syns or points.
I have created this pie using beef brisket in Gravy which can be found in the chilled Isle in Tesco and I have also used a tin of Tesco lean stewed steak in Gravy.
I have to say i am absolutely loving Meat Free Monday as its really challenging me to come up with new ideas and this one worked a treat perfect for the weekend when you fancy something naughty.
You will see in the video i have given an alternative to the Tesco meat free chicken i used as i think it was really high in syns but it did taste amazing and had a good texture to it, but use whichever chicken product you like.

This is truly a fantastic weekend meal and can be served with so many different side dishes you could add egg fried rice, noodles, spring rolls it really does make a great basis for a Chinese banquet meal.
I always use a bag of stir fry with this meal to bulk it out I cook this separately with a splash of Soy Sauce.

I saw a recipe similar to this on a vegan facebook page but the list of ingredients was a mile long and some of them weren’t very “diet” friendly – so i decided to try and make it with less ingredients and less calories. Well i can definitely say it ticked all the boxes what a fab recipe it turned out to be and so easy to make very quick to cook but so tasty and one i know you will love. My top tip is to have a little patience to reduce the sauce down and take it down as far as you like my suggestion would be so it covers the chicken and you have a little leftover to pour over when serving.
I have tried and tested this recipe several times now and it works perfectly more importantly no water logged fajitas!! For the chicken stick to thigh or breast and if using breast leave it whole until its cooked it will stop it drying out.
Use whichever fajita seasoning you like and add any vegetables you like the key is not to add any liquid and cook on low, i think this setting is best to ensure the onions are cooked or you can run the risk of having crunchy onions. I know you can easily cook fajitas in a pan on the hob but this recipe really comes from when the kids were little they loved fajitas on a Saturday night but after a long day out coming home then having to start cooking just seemed like such a chore plus they were always starving 😂😂
In the video below are the ways you can reduce the sauce if you want but remember probably the easiest way is to add the contents to a large frying pan on the hob, heat on high and reduce it that way. The methods in the video do work the lid off method took approx 20 mins to get to the consistency shown.
You can serve these in any way you wish with wraps or make a fajita pasta bake or use stand and stuff boats as i have in the below picture.
I love this recipe but have not made it for ages and its such a shame as it really does help when you hit the weekend and want a takeaway but don’t want to undo all your hard work. This is a really simple recipe once you get the basics under your belt and that really means taking time with the sauce. However i did have a brilliant after thought which i will be doing next time i make this meal and that is make a huge batch of the sauce and freeze it this will really speed up the process when making it, so that will be my next task!

Another one ticked off my “to cook list” in my head this has always just felt like cooking a giant beefburger which has always put me off making it, because in my eyes a kebab is chicken or lamb. However, i had minced beef that needed using up and needed a quick recipe so decided to bite the bullet and make a Doner Kebab but as always taking the easy route and popping it in the slow cooker. This recipe is so easy and will make a fantastic family weekend meal for me what made it even easier is is that it can sit in the fridge once made and still be perfectly fine – i made mine on Friday and didn’t get around to eating it until Monday. Easiest way to reheat the doner meat is to slice it and then heat on low in a frying pan – i used a grill pan but use whatever is easy for you.
Another fantastic quick lunch idea or evening meal this can be on the plate in under 5 mins and is really tasty. Use whichever sweet chilli sauce you like I didn’t use noodles in this stir fry but i have added a little top tip in the video which stops the noodles from breaking up in the pan plus they cook much quicker this way – just make sure when you take them out of the microwave they are warm and you can easily pull them apart if not microwave for longer.
This has got to be the easiest curry you will every make and it will not disappoint in taste and it can be prepped in 3 mins – if you dont want to soften down the onions. Add whatever veg you like any frozen veg add towards the end of cooking say last 15 mins i usually add a tin of chickpeas but forgot on this batch! Batch cooks well and freezes well and makes 4 or even 5 big portions depending on what you use to bulk it out and serve it with

Yay!!! i finally got around to making this recipe – one more ticked off my list 😃 I would say 95% of the time i cook from scratch but there are times when this is just not possible for a multitude of reasons – lets face it we all have those days when lack of energy or tiredness win out but that doesn’t mean we have to eat an off plan meal or something that is boring and here is a prime example of what i mean.
