Sticky Sweet Chilli Chicken Nuggets

Another fantastic Meat Free Monday recipe and this one is not only super quick but super tasty too. I have made this vegetarian by using Quorn Chicken nuggets but you can use any chicken nuggets you like to suit what your family likes.

I served mine with a huge stir fry and noodles but this will work equally as well with rice. This really is the simplest recipe ever the only tip i have is when creating the sauce do not take your eyes off pan as the sauce reduces very quickly and you need to make sure you have enough left to coat the chicken.

Flaming Hot Wotsit Chicken

Over the years i have made lots of chicken recipes covered in crisps and to be honest they all work and add bags of flavour without the need to create spices that give a desired taste.

This is a really simple recipe however i made a mistake when making this batch and it goes along this line, because the crisps when crushed are basically “dust” they absorb liquid very easily, so when you dip them in the egg they will quickly start absorbing that liquid and become soggy.

So my top tips – when crushing the Wotsits DON’T crush them into a fine crumb leave some bigger chunkier bits this will help with the sogginess also don’t spray them with oil before putting them into the oven again they crisps will just absorb the liquid.

Sticky Hoisin Duck Stir Fry

What an absolute winner this was i really could not believe how good this vegetarian duck is. The biggest question is does it taste like duck – the short answer is yes! the texture was fantastic and it really does “mimick” duck well.

I decided to make a stir fry out of mine but you could use this as a basis for a Chinese Fakeaway, from frozed the duck i used takes 7 mins to cook perfect for a mid week meal too.

You can make this recipe using duck breast or leg cooked in a pan, grill pan, or an electric grill or in the oven – once cooked shred it with 2 forks and follow the below recipe.

Below is the duck i used which i purchased from Tesco but im sure Asda or other supermarkets will have it in stock.

Slow Cooker Vegetarian Meatball Subs

This wasn’t supposed to be on my meal plan this week but when you wake up feeling not too good my advice is go for the easiest option if you have to cook- so meatball subs it is!

As you will see i have used sausages to make the meatballs with, this is purely down to the fact i did the food shopping on Wednesday the week before and meatball subs weren’t even on my radar. However, i have to admit they worked beautifully and when i make this again i will probably use the Richmond sausages you see in the video.

This recipe makes 4 portions and because there is just 2 of us i still have 2 portions left in the fridge patiently waiting for my second meal which will be spaghetti and meatballs – now don’t you just love the fact you have taken 10 minutes out to create meals for 2 days in the week! i know i do – this will also freeze well.

Chicken Sharing Platter

As you know I’m huge fan of making these because they are minimal effort but always look fab and are a great way of cooking in the hotter months.

This is basically my Slow cooker chicken to roast chicken served with bread buns stuffing amd roast potatoes… so a kind of deconstructed Sunday Dinner. Serve woth anything you and your family like it all works with these kind of meals.

Sweet & Sour Chicken

Ohhhh the months I have spent thinking about this recipe and trying to make it “diet friendly” has actually hurt my head 🤣🤣 However, it’s all being worthwhile.

We absolutely loved this recipe and for us it ticked all the boxes and it will be making another appearance on my meal plan very soon.

When creating this recipe I wanted to show you that you can take time to create a meal say for the weekend that is amazing but also one midweek which will also be equally as good. Here is my thinking…. in this recipe you will see i have coated and baked the chicken and I have to admit it was really tasty. You could actually make this recipe without coating or baking the chicken which will speed up the cooking and reduce calories.

How would you do this…. dice the chicken and in a large frying pan sprayed with oil cook the chicken towards the end of cooking turn the pan to a high heat just to add a little bit of colour to the chicken removed from pan and set aside. Then make the sauce as decribed below.

As you know I follow Slimming World but I’m not going to give syn values on any of my recipes as it breaks copyright rules. So below is the information you need to work this out for yourself:-

Tomato Sauce – depends on brand you use, and if you decide to use reduced sugar versions

Sugar / Sweetener – depends how you calculate it

Cornflakes – you could use breadcrumbs, or you may opted to not coat and bake the chicken

These variables can only be decided by you and what diet you follow and how you calculate your diet plan / calories.

Toffee Baked Oats

I’m not always a fan of baked oats but every now and again I have the urge to make them. So today’s flavour is toffee which I adore and I’m sure you have seen biscoff used all over social media I decided to try something different.

I used ASKEYS toffee sauce which can be found in most supermarkets it tastes amazing, unlike biscoff it doesn’t have the density to “sit” on top of whatever you drizzle it on for too long but don’t let that put you off! the end result is so good.

Cheesy Taco Gnocchi Bake

Another fantastic vegetarian meal we really enjoyed this one and it is super easy to make perfect for those days when you don’t have time to stand and cook for hours, this literally takes 15mins to get onto the table. My top tip for cooking gnocchi is don’t over cook it as soon as it floats to the top of a pan of boiling water remove it and drain it immediately.

The taco beans i used were in a spicy tomato sauce but to be honest i didn’t feel the sauce was spicy at all and once i added the vegetables to them i decided to add a teaspoon of paprika this is optional, as always taste and adjust to your liking.

Although this meal is part of my “meat free Monday ” series on instagram and facebook you can add meat to it if you wish Chicken, Minced Beef, Sausages or ham would work well.

You will notice in the video that i transferred the meal from the frying pan into an oven proof dish – this was for the end photograph only and when i make it again i will add the gnocchi to the frying pan top it with cheese and pop it under the grill. Making more washing up is not for me at all 😂😂😂😂🙈

Peri Peri Pork Kebabs (Spicentice)

I have wanted to make this recipe for weeks now and i have finally got around to it and it did not disappoint! Pork is a relatively cheap cut of meat and is very lean which means it can have a tendency to dry out and be tough. My top top is don’t overcook the pork if you are unsure start on a low heat and keep checking until the pork is fully cooked.

Portuguese Peri Peri Pork Chops (Spicentice)

I have made these many times and if you like Nando’s these really have that vibe / taste to them. Pork is such a cheap cut of meat and for us has always been a firm family favourite.

However everytime I cook these chops I get asked how I cook them how do I get such a lovely colour and how do I stop the drying out. So here it is my “HOW TO” .

I like my meat well cooked and that in itself can dry meat out but I use the Jamie Oliver technique which I think he designed for novice cooks like me, at the time I was terrified of cooking meat 🙈🙈. This method just works it slows down the process you’ve got time to adjust heat settings etc and for me it definitely helps with not over cooking meat.

Pizza Bagels

A brilliant way of getting a quick lunch and perfect for the little ones, add any toppings use any cheese, add any flavours you like.

You will see from the images below i have also use a wholemeal pitta bread to make these, they work just as well – just use the method in the video.

To top mine i add mushrooms, pepper, tomatoes, and usually a mini peperami stick.

Cheats Egg Fried Rice

As you know im all about mid week cheats and hacks and to me standing cooking rice is one of my pet hates and it either turns out brilliantly or a soggy mess 😂😂🙈

So here is a fool proof way of getting perfect egg fried rice everything time………cheat! You will see i used a pouch of microwave rice but heated it in the pan instead of the microwave i love these pouches and they are becoming more budget friendly especially the supermarket own brands. If you have cooked rice that needs using up that will also work

Add whatever flavours you like some people like to add a splash of soy sauce, but in this one i left it out because the meal i served it with already had soy sauce in it.

Tartar Sauce

Its been so long since i last made Tartar Sauce and i forget how good it tastes also how easy it is to make. In this recipe i haven’t given specific quantities per ingredient as i think it is difficult to do with this one as everyone’s taste buds are different. I loved the one i made Graeme thought it was a bit too sharp….. did not stop him from eating it though lol.

My top tip is to add ingredients slowly and keep tasting until you get the perfect match for you, once made up this will last in the fridge in a Tupperware type tub for 3-4 days.

Soulvaki (Spicentice)

Pimp Up Your Packet Rice

Lately i have been using more and more microwave pouch rices mainly because they are just so quick to use. However, they can lack bulk and taste at times so i have put together a little video of how i bulk mine out and add more taste and texture to a boring rice.

You can also do this with any leftover rice you have, add any spices, any vegetables that need using up or any herbs you have its a fantastic way of dealing with anything that is destined for the bin.

Leftover Beef

I always buy a bigger beef joint than we actually need for a Sunday Dinner so that we have leftovers, which means i can either use it or freeze.

This will be a “rolling” blog of how i use up beef and will keep adding to it as time goes by.

Chilli Enchiladas (using leftover Chilli)

As you know im a huge fan of slow cooker chilli i make it all of the time and always have a batch in my freezer, because it can be made into so many different meals.

I made a batch of enchiladas a month or so ago and we both loved them so decided to use chilli to see how that would work and guess what????? they were amazing.

Pizza

This is basically my flatbread recipe for the base but decided to write up a separate recipe and do the how to video as I’m pretty sure this will answer all the questions I get asked lol.

You can make these as big or as small as you like it really depends how many you are feeding and what you are serving it with. The one i made served 2 of us with a huge salad a new potatoes.

Slow Cooker Sausage & Bean Hot Pot (Storecupboard Version)

As you know i absolutely love store cupboard recipes and for me there is nothing wrong with using tins or packets as long as they fit in with your diet plans. Also most store cupboard recipes also come with a winning price tag and make them a fantastic budget friendly family meal.

This one is perfect for using up vegetables from the fridge tins in the cupboards as it really adapts well to suit what you have, i used chickpeas but you could easily use butter beans, borlotti beans, taco beans anything you have will work!

My top tip is once the hot pot is cooked cut the sausages into 3 so they distribute even throughout the dish, this way the kids wont pull all the sausages out and leave you with a bean and tomato meal!!
