Coriander Lime & Chilli Chicken Burgers

These came to me in a flash of inspiration of having lots of coriander leftover and i wanted something light and summery – these burgers fitted the bill perfectly! Fresh tasting zingy and very easy to make you can use any part of the chicken i only had breast when i made them but next time i will use minced chicken or even boned thigh as its cheaper – these will also freeze well for batch cooking.

If following slimming world these are syn free and fab on SP days as you will see my top tip says dont over blend the chicken if you do it will go to mush so if your unsure pulse the blender rather than blend your looking for a chopped rough texture not a smooth pate like mix
